Christmas Eve Menu 2024 at Factory Resort / festive dinner

Hot buffet

Soups:

• Beetroot soup with dumplings
• Dried mushroom and vegetable soup with noodles

Main courses:

• Confit duck leg in plum sauce
• Dumplings with cabbage and mushrooms
• Fried carp with mushrooms
• Stuffed cabbage with creamy pearl barley in porcini sauce
• Baked cod in Polish sauce with pickles
  and grated egg
• Breaded cheese and potato croquettes

Sides:

• Boiled broccoli, cauliflower, carrot
• Cabbage with peas
• Herb-roasted potatoes
• Braised beets in honey with spices

Cold buffet:

Fish starters:

• Cod with vegetables and tomatoes
• Salmon in jelly
• Traditional chicken galantine
• Baked trout in sweet and sour sauce
• Herring in oil, herring in cream
• Kashubian herring with tomatoes, pickles and dried plums
• Chickpea patties on crunchy lettuce with vegetables and herb sauce

Salads:

• Salad with goat cheese, pomegranate, and nuts
• Vegetable salad

Cheese:

• Yellow (gouda, salami, Swiss)
• Mold (blue cheese, goat cheese roll, corregio, brie, camembert with pepper)

• Tomato soup with pasta

Main courses:

• Turkey fillet in a sauce of edible chestnuts and dried plums
• Beef shank in sauce with red wine, honey, and cinnamon
• Baked crimson fish in herb crust with spinach sauce
• Lazy dumplings with strawberry mousse and sweet cream

Sides:

• Potatoes with dill
• Buckwheat groats with dried mushrooms
• Cauliflower with toasted breadcrumbs and butter

Cold buffet:

• Cheese and cold cuts
• Calamari in batter, garlic sauce
• Salmon tartare with colorful peppers and dill
• Roasted pork with tuna sauce, capers, and arugula
• Poultry terrine with spinach
• Cucumber stuffed with herb cheese
• Falafel on crispy lettuce with cocktail sauce

Salad toppings:

• Lazy dumplings with strawberry sauce

• Potatoes with dill and butter
• Rice with green peas and chickpeas
• Broccoli with almonds and butter

Cold buffet:

• Cheese and cold cuts
• Shrimp in batter with sweet chili sauce
• Smoked fish with tartar sauce
• Poultry satay with peanut sauce
• Beef rosbif carpaccio with dried tomatoes, capers, and amber cheese
• Tomato with yellow cheese and horseradish
• Grilled pepper on arugula with balsamic sauce
